Whoopie PiesRecipes: Chocolate Whoopie Pie

Most New Englanders have experienced the joys of biting into a soft, fudgy Whoopie Pie.  While it is a regional favorite that may make your friends from other parts of the country raise their eyebrows, New Englanders take their Whoopie pies very seriously.  (The State of Maine legislature even created a bipartisan proposal to name the Whoopie Pie the State Dessert . . . . and they succeeded!)

Whoopie Pies, while extremely delicious, can require a bit of work to create.   Stonewall Kitchen, headquartered in York, Maine, has created the perfect Whoopie Pie recipes.  Fudgy, light chocolate cakes with a rich, creamy center that will make your taste buds break out into dance.

Chocolate Whoopie Pie

(Both cake mix and filling mix included in one box)

Stonewall Kitchen Whoopie Pie MixFor the cake:

1 egg
3 Tbsp. vegetable oil
½ cup milk
1 package Stonewall Kitchen: Chocolate Whoopie Pie Mix (cake mix)

For the Filling:

6 Tbsp. butter, softened
1-2 Tbsp. milk
1 package Stonewall Kitchen: Chocolate Whoopie Pie Mix (filling mix)

Directions for cake

Preheat oven to 400° F.  Grease and flour 2 cookie sheets.  In bowl of an electric mixer, beat together egg, oil and milk.  Gradually add in contents of cake mix.  Mix until well incorporated and smooth.  Drop by tablespoons onto prepared cookie sheets.  Bake until toothpick comes out clean, 8-10 minutes.

 

Directions for filling

Beat butter with electric mixer.  Slowly add contents of filling mix and milk.  Beat until fluffy.  Spread between two cooled Whoopie pie cakes.
